to make this garlic butter parmesan pasta, we’re going to start off by cooking the pasta. then, in a pan, we’ll make a quick garlic butter pasta sauce by cooking fresh garlic in butter until it becomes a light golden colour. then, we’ll add tomato paste, chicken stock and some extra seasonings. once the sauce thickens up, we’ll add the cooked pasta, then add some more butter as well as some parmesan cheese and mix that into the pasta. top with more parmesan and we’re done!

step one: boil your pasta in water with some salt and a little bit of oil and cook according to package instructions. once the pasta is cooked, it should be firm with a little bit of bite to it, and not overly soft. drain the pasta and set it aside.
step two: heat up your pan, the melt butter in the pan. add fresh minced garlic. cook the garlic in the butter over low-medium heat until it becomes a light golden colour – this took about a minute.
step three: add the tomato paste, and cook this over medium heat.

ingredients
9 ingredients- 200g pasta (7.1 oz)
- 25g butter, salted (1 tbsp + 2 tsps)
- 5 cloves of garlic, minced
- 1 tbsp tomato paste
- 150ml chicken stock (1/2 cup + 2 tbsps)
- 1/8 tsp black pepper
- 1/8 tsp red chilli flakes
- 1/4 tsp mixed herbs
- 10g grated parmesan cheese (around 1/8 cup)
method
7 steps- boil your pasta in water with some salt and a little bit of oil and cook according to package instructions. once the pasta is cooked, it should be firm with a little bit of bite to it, and not overly soft. drain the pasta and set it aside. you can save some of the pasta water in case you need it.
- heat up a pan, and add 15g or 1 tbsp of butter. let it melt, then add minced garlic and cook this over low-medium heat, until it becomes a light golden colour - this took around 1 minute and 10 seconds.
- add tomato paste and cook this over medium heat for a minute or two to deepen the flavour.
- add chicken stock, as well as the black pepper, red chilli flakes and mixed herbs. mix everything together and gently bring this to a boil.
- add the cooked pasta and mix it into the sauce until it's coated. let this cook for about a minute over medium-high heat.
- remove the pan from the heat, then add the other 10g (or 2 tsps) of the butter, as well as the parmesan cheese. mix this into the pasta.
- sprinkle with some more freshly grated parmesan before serving and let's eat!
