these mini pancakes are bitesized, fluffy and the perfect easy breakfast, brunch treat or party bite. they come together in minutes with just one bowl, a squeeze bottle and a non-stick pan!
mini pancakes are so incredibly easy and work for absolutely everything: a quick school breakfast, a brunch spread, a party, a dessert loaded with Nutella and fruit, or a stack on skewers for a grab-and-go morning. they’re bite-sized, fluffy, golden and one of the most fun things to make and eat.
the secret to making these mini pancakes easy and fuss-free is the squeeze bottle. transferring the batter into a squeeze bottle gives you round, consistent mini pancakes every single time, as there are no uneven spoonfuls or messy edges, just clean little rounds that cook evenly and stack beautifully. i use a crepe maker for mine because the flat surface is ideal, but any non-stick pan works just as well. no oil or butter in the pan and no fuss! just the most reliable, easy mini pancakes recipe you’ll come back to again and again.

learn how to make these mini pancakes
we’ll begin making these mini pancakes by whisking together an egg and sugar in a bowl until combined. then, add some oil, milk, vanilla extract and thick yoghurt. whisk all of this together until combined.
in another bowl, add flour, baking powder, baking soda and salt. mix all of this together and add it to the wet ingredients. whisk the dry ingredients into the wet ingredients until combined and somewhat smooth. then, heat up a pan over low-medium heat and transfer the mini pancake mix into a squeeze bottle. pipe small rounds of batter directly onto the surface of the pan. once bubbles appear on the surface and the edges look set, we flip each mini pancake and cook for another minute or so until golden. serve the mini pancakes with toppings and fruits, and we’re done!
mini pancakes ingredients
-
egg – we’re just going to be using 1 large egg for this mini pancakes recipe – make sure it’s at room temperature.
-
granulated sugar – to make this easy mini pancakes recipe, we’re going to whisk together an egg and some granulated sugar.
-
oil – i like to use oil instead of butter to make these fluffy mini pancakes. i find that oil gives me the fluffiest mini pancakes over butter. use any neutral-tasting oil. you could also use melted butter if you would prefer that.
-
milk – this mini pancake recipe uses full fat or whole milk. make sure it’s at room temperature so that it combines easily with the rest of the ingredients.
-
yogurt – this mini pancakes recipe also uses yogurt in the pancake batter. use any kind of thick yogurt, like greek yogurt, and try to make sure that it’s at room temperature.
-
vanilla extract – optional, but a splash of it will add a nice, subtle vanilla flavour to your mini pancakes.
-
flour – we’ll be using plain flour or all purpose flour for this mini pancakes recipe.
-
baking powder – using baking powder helps make the best fluffy mini pancaes. you’ll need baking powder to ensure that the mini pancakes are thick and fluffy.
-
baking soda – i use just a small amount of baking soda in this mini pancake recipe. the baking soda reacts with the acid in the yogurt to give you a thicker, fluffier mini pancake.
-
salt – a pinch or two of salt helps balance out the sweetness in these mini pancakes.
-
any extra mini pancakes toppings like chocolate spread, biscoff spread, fresh fruit, maple syrup, whipped cream or whatever else you like.
tools:
-
large bowl – for the mini pancake mix
-
small bowl – you’ll need to mix the dry ingredients separately in a smaller bowl first
-
whisk – to mix the mini pancake batter until combined
-
squeeze bottle – a standard plastic squeeze bottle (the kind used for condiments or icing) works perfectly. fill it with the batter and pipe directly onto the pan. if you don’t have one, a piping bag with a small round tip works too, or you could even just use a teaspoon.
-
non stick pan – for cooking the mini pancakes
-
spatula – for flipping the mini pancakes easily

tips and notes
-
i would recommend using room temperature eggs, milk and yogurt when making the pancake batter for your mini pancakes. this will just help the ingredients combine better and make things easier for you.
-
combine the dry ingredients properly in a separate bowl so that the baking powder and baking soda are distributed throughout.
-
once you add the flour and dry ingredients to the wet ingredients, be sure not to over mix. you want a relatively smooth batter. it’s okay if there are some small lumps, but keep in mind that a lumpy batter might make it difficult for the pancake batter to pass through the squeeze bottle tip easily.
-
heat up your non stick pan over low heat. make sure the pan is not too hot, as the high heat will make the outside of the mini pancakes burn before the inside is properly cooked.
-
but keep in mind that the pan actually needs to be hot before you start piping. give it a couple of minutes to heat up properly. you can also start with a test pancake to see if the pan is hot enough.
-
i did not add any butter or oil to the pan before adding my pancake batter. this, and using a non stick pan, is what gets you that smooth surface on the mini pancakes. if you’re not too bothered about this, and would like some added flavour and crispier edges on your mini pancakes, feel free to lightly grease the pan in between each batch of mini pancakes.
-
don’t flip your mini pancakes too early. wait until you can see bubbles across the whole surface and the edges look dry before flipping. flipping too early means the pancake won’t be set and will fold or break.
-
if the surface of your mini pancakes is not bubbling at all or taking a lot longer than the recommended times, it could mean that your pan is not hot enough and you might need to increase the heat.
-
be sure to work in batches, leaving a little space between each mini pancake when you pipe them, as they’re going to spread a little.
-
use a kitchen scale to measure your ingredients. while i add both metric and cup measurements for this mini pancake recipe, i always recommend using a kitchen scale to weigh out your ingredients for most accurate results.
-
if you do decide to use cups, this mini pancakes recipe has higher than typical cup flour measurements as it bases them on scooping the flour (since this is what most people tend to do).
-
cover any leftover pancake batter and store it in the fridge for up to 24 hours.
frequently asked questions
-
how do i know when to flip the mini pancakes ?
– look for bubbles on the surface of the mini pancakes along with set edges.
-
my mini pancakes aren’t fluffy – what went wrong ?
– this is usually because of over mixing the pancake batter. be sure to gently mix the dry ingredients in until combined and don’t worry too much if there are small lumps in the batter.
-
can i use butter instead of oil when making these mini pancakes ?
– yes, you can use butter that’s been melted and cooled instead of the oil in the pancake batter. i like to use oil because i find that it makes these mini pancakes fluffy and extra moist, but butter will give you better flavour and a richer taste.
-
can i make the mini pancake batter ahead of time ?
– to make these easy mini pancakes, you can definitely make the batter ahead of time, as it keeps in the fridge for up to 24 hours. it will thicken up the longer it sits though, so you might need to add a splash of milk to loosen it slightly before cooking the mini pancakes.
-
can i double this mini pancake recipe ?
– yes, you can double the recipe to make a larger batch of mini pancakes.
-
can i make these mini pancakes without yogurt ?
– if you don’t have yogurt on hand, you can make these mini pancakes with sour cream instead. i would really recommend using either yogurt or sour cream for a thicker, fluffier mini pancake.

can i make this mini pancakes recipe for kids before school ?
– absolutely! these mini pancakes are really easy and quick to whip up, and they’re not overly sweet either, especially if you serve them with fresh fruit and a drizzle of honey or maple syrup. these mini pancakes would be great as a school breakfast for kids.
-
are mini pancakes healthy ?
– these mini pancakes are considered more of a treat rather than a health food, but they’re made with simple, whole ingredients. compared to shop-bought versions, homemade mini pancakes have no preservatives or additives. to make this a slightly healthier treat, you can serve these mini pancakes with fresh fruit and a drizzle of honey instead of syrup or nutella or whipped cream.
-
do i need a special mini pancakes machine to make these ?
– no, you don’t need any mini pancakes maker or machine. the squeeze bottle does the work of making them consistently round and mini-sized. i do like to use a crepe maker, as it’s ideal because of its flat, even surface, but it’s absolutely not essential. a simple non-stick pan is all you really need to make these mini pancakes.
-
can i make these mini pancakes chocolate chip flavoured instead of plain ?
– yes, you can make these as mini chocolate chip pancakes! you can stir chocolate chips directly into the pancake batter before making the pancakes, or you can just follow the recipe as stated, pipe the plain pancake batter into the pan and scatter the chocolate chips on top of each pancake right after piping and before the pancake batter sets.
-
can i make these mini pancakes using pancake mix ?
– yes, you can use pancake mix for mini pancakes instead of making the pancake batter from scratch if you want to make this mini pancakes recipe easy and quick. just make the batter according to the package instructions, transfer to a squeeze bottle, and follow the rest of the recipe as stated.
-
can i make this mini pancakes recipe eggless ?
– i personally have not tried making these mini pancakes without egg in the pancake batter, so i wouldn’t be able to offer an appropriate substitute that would give a similar result.
-
can i make these mini pancakes on a griddle ?
– yes! a flat griddle pan will work brilliantly for these mini pancakes. heat it up, pipe the batter in small rounds and cook the same way as on a non-stick pan.
-
can i make other flavours of these, like mini ube pancakes or mini matcha pancakes ?
– yes, you can absolutely add some matcha or ube to the pancake batter if you like. mini ube pancakes would turn out really nice with a coconut whipped cream!

-
mini pancakes with nutella or biscoff spread
-
mini pancakes with chocolate sauce
-
mini pancakes with fruit and fresh whipped cream
-
mini pancakes with syrup
-
-
can i serve this mini pancakes with ice cream ?
– yes, you can serve these mini pancakes with ice cream if you want this to be more like a dessert. just serve the mini pancakes and add a scoop of vanilla ice cream on top with a drizzle of warm maple syrup for a proper mini pancakes dessert.
-
how can i make these mini pancakes for a party ?
– when making these mini pancakes for a party, you can make a big batch and set up a mini pancakes toppings bar with syrups, Nutella, whipped cream, fresh fruit and chocolate sauce. this would be a really great idea for brunch parties, special birthday breakfasts and school events.
-
can i serve these mini pancakes on skewers ?
– serving them on skewers would be a great way to have these mini pancakes on the go or to present them nicely for something like a party or brunch. just thread the mini pancakes on a stick or wooden skewers alternating with strawberries and banana chunks for a fun presentation!
-
can i make these mini pancakes in the oven ?
– i’m sure you can make these mini pancakes using muffin tins in the oven for more of a cake-like texture. however, i haven’t personally tried this myself so i can’t recommend any specific temperatures or baking times.
-
do i have to make these pancakes mini in size or can i make them bigger ?
