electric mixer – an electric mixer will speed up the process when it comes to beating together the egg yolks/whites and sugar and whipping the mascarpone and cream. a whisk will do just fine if you don’t have access to a mixer but it will definitely take a little longer.

a dish for your oreo tiramisu – an 9×13 dish would work best for this oreo tiramisu recipe but you can use anything you like. you can also use a round dish or make individual oreo tiramisu dessert cups or boxes.

step by step instructions

step one: in a small, wide and shallow dish, add freshly brewed coffee, and set this aside to cool slightly while you make the mascarpone cream for the layers.
step two: separate the eggs. set the whites aside in a separate bowl. add yolks to another large mixing bowl. add half of the sugar to the yolks and beat with a mixer (or a whisk) until the mixture becomes a pale yellow colour and increases in volume.
step three: add mascarpone cheese, vanilla extract and heavy cream to the egg yolks and beat this into the egg yolk mixture until combined and the mixture thickens up. the mixture should look thick and smooth.


step four: to the egg whites, add the rest of the sugar and a little bit of vinegar and whip this mixture until the egg whites look pale and fluffy. they should be soft, with a tip that curls over slightly when you lift the beaters out of the bowl.
step five: add the egg whites to the mascarpone cream mixture little by little and gently fold them into the mixture until combined.


step six: continue to do this until you’ve added all of the egg whites to the cream, and the mascarpone cream looks smooth and thick.
step seven: dip oreo cookies one by one into the coffee, then line them up in a dish. cut some up if you need to, to fill any gaps in the dish.


step eight: add half of the mascarpone cream to the dish, and spread it over the oreos in a thick and even layer.
step nine: add another layer of the coffee-soaked oreos on top of the mascarpone cream.
step ten: add the rest of the mascarpone cream on top, spread it out into an even layer and spread it thin until it’s smooth on top. (my dish just had two layers of the oreos and two layers of the cream, but you might have more layers depending on the size of your dish).


step eleven: place your oreo tiramisu in the fridge for about six hours (but preferably overnight) so that it can set completely and the coffee-soaked oreos can soften.
step twelve: the next day, once the oreo tiramisu is set, make the chocolate ganache. break up pieces of chocolate and add them to a bowl.
step thirteen: to a small pot, add heavy cream, and heat this up over low-medium heat. heat it up until it starts to bubble slightly, then remove the pot from the heat and pour the hot cream on top of the chocolate in the bowl. mix the hot cream and chocolate together until smooth – the hot cream will melt the chocolate.
step fourteen: let the ganache cool slightly, then pour it on top of the oreo tiramisu. tilt the dish so that the chocolate ganache spreads out over the oreo tiramisu in an even layer.
step fifteen: place this in the fridge again for about 15 minutes so that the ganache can thicken and set.
step sixteen: once it’s set, remove from the fridge, then slice up, and let’s eat!

do not get any egg yolk into the egg whites as this will prevent the egg whites from whipping. make sure the beaters or whisk are clean as well when whipping the egg whites.

make sure to use cold double cream or heavy cream straight from the fridge otherwise it won’t whip well.

when it’s time to dip the oreo cookies, i like to quickly dip them in a good two or three times to make sure that they’re nicely soaked in the coffee. the coffee shouldn’t be hot so the oreos won’t fall apart, but try not to let them linger in the coffee for too long.
