tips and notes
-
try to use ripe, fresh strawberries for the best flavour.
-
pat strawberries completely dry after washing, and cut the tops off evenly.
-
use good quality white chocolate and chop it evenly so that it’s easier to melt.
-
make sure that water doesn’t get into the bowl with the white chocolate in it.
-
you want to make sure to keep the temperature low when melting white chocolate, as heating it over a high heat or heating it up too quickly can cause it to seize and become clumpy. if using a microwave, heat the while chocolate up in short, 20 second intervals, stirring in between each interval until completely melted.
-
i prefer to use a double boiler for melting the white chocolate as it allows the chocolate to melt slowly and evenly, and prevents the chocolate from getting too hot.
-
sift the matcha in to the melted white chocolate to ensure a smooth, lump-free matcha chocolate dip.
-
pour the matcha chocolate over the fresh strawberries and eat immediately before the chocolate sets.
frequently asked questions

– yes, matcha and chocolate pair really nicely together. the earthy notes of matcha balance the sweetness of white chocolate in the most perfect way.
-
what does matcha chocolate taste like ?
– matcha white chocolate has a unique flavour – creamy and sweet with a gentle earthiness. it’s less sweet than just white chocolate on its own and has quite a complex but delicate flavour.
-
can i use milk chocolate instead of white chocolate for the matcha chocolate ?
– yes, you can. but i prefer to use white chocolate as it doesn’t overpower the matcha flavour and really complements it.

– these strawberry matcha chocolate cups are best eaten immediately, while the chocolate is still melty. if you don’t mind the chocolate setting, you can also make them ahead of time and eat them within a few hours.
-
can i use a different type of fruit instead of strawberries ?
– yes, you can use any kind of fruit that you like.
-
why did my white chocolate seize ?
– this can happen if water gets into the chocolate. make sure water doesn’t get inside the bowl if you’re using a double boiler to melt the chocolate. it can also happen if you heat up the chocolate over too high of a heat or too quickly. you want to heat up the chocolate slowly over a low heat. if using a microwave, microwave in short bursts and stir in between.
-
my matcha is lumpy in the chocolate – what do i do ?
– sift the matcha powder in the melted chocolate before mixing it in. i just used a spoon to mix it in, but you can also use a whisk to ensure that it’s completely smooth and lump-free.
