sugar cookie fruit pizza ingredients:
-
butter – we’re going to use salted butter here. if you would prefer to use unsalted butter, just add a small amount of salt to the dry ingredients. for this soft sugar cookie fruit pizza recipe, i prefer to cream the softened butter with the sugar over using melted butter. this is one of my favourite butters to use in cookie recipes.
-
granulated sugar – this sugar cookie fruit pizza recipe involves creaming butter and granulated sugar together.
-
egg – we’re just going to use one large egg in this sugar cookie fruit pizza recipe. make sure it’s at room temperature so that it’s able to combine easily with the rest of the ingredients.
-
vanilla extract – optional, but a splash of it will add a nice, subtle vanilla flavour to your sugar cookie base as well as the sugar cookie fruit pizza icing.
-
double cream/heavy cream – this is optional but i like to add a small amount of heavy cream to my homemade sugar cookie dough for fruit pizza as it adds a lovely richness and makes the cookie base extra chewy. heavy cream is also used in this recipe to make the cream cheese frosting to add to the top.
-
flour – we’ll be using plain flour/all purpose flour for this recipe.
-
baking powder – i use just a small amount of baking powder in the sugar cookie dough.
-
icing sugar or powdered sugar – this will be used to make our cream cheese frosting.
-
cream cheese – i like to make this sugar cookie fruit pizza with cream cheese frosting. to do this, we’re going to mix softened cream cheese with the whipped heavy cream.
-
fresh fruit – you can use any fresh fruit that you like to add to your sugar cookie dessert fruit pizza. i used strawberries, raspberries, blueberries, kiwi and some nectarine.
tools:
-
large mixing bowls – you’ll need a bowl for the cookie dough, one for the cream cheese, and a separate one for whipping the cream.
-
hand mixer – we’re going to whip the heavy cream, so you’ll need a mixer for this. you can also use a whisk, but this will take a bit longer.
-
silicone spatula or spoon – to fold the whipped heavy cream mixture into the cream cheese.
-
round pan – i used a 10 inch round pan for my sugar cookie crust for a slightly thicker cookie base. if you’d like a thinner base, use a bigger pan.

tips and notes
-
i would recommend using room temperature butter and eggs when making the sugar cookie base for fruit pizza. this will just make it easier to mix the ingredients and help the ingredients incorporate better.
-
use room temperature cream cheese when making the cream cheese frosting- this will ensure that the frosting is smooth and help avoid any lumps.
-
if you forgot to leave the butter out to let it soften, you can always put it in the microwave for about ten seconds, just so that it can soften slightly so that it’s easier to mix. make sure you don’t melt the butter completely or put it in the microwave for too long.
-
if using unsalted butter, just add around 1/4 tsp of salt to the dry ingredients.
-
once you add the flour and dry ingredients to the sugar cookie mixture, gently mix with a spoon or silicone spatula until just combined to avoid over mixing the dough. over mixing can make your cookie crust tough and less soft and chewy.
-
if you have the time, i would recommend chilling the dough in the fridge for 30 minutes before baking your sugar cookie base. the dough will initially be quite sticky, so chilling it will make it easier to work with, and will also help develop the flavours.
-
i used a 10 inch round pan for a thicker cookie base – if you’d like a thinner base, you might want to use a bigger round pan, bearing in mind that a thinner base might take less time to bake.
-
adjust baking time as needed. every oven is different, so i recommend keeping an eye on your sugar cookie base as it bakes. i would recommend a time of 15-20 minutes (depending on the size of your pan and the thickness of your base), with 15 minutes being slightly underdone, and 20 minutes being on the more cakey/firm side. i baked my cookie base for 18 minutes in total.
-
once your sugar cookie base is out of the oven, make sure it cools completely before you try to remove it from the pan or before you put the frosting on. if you put the cream cheese frosting on a cookie base that’s still warm, the frosting will melt.
-
use a kitchen scale to measure your ingredients. while i add both metric and cup measurements for this recipe, i always recommend using a kitchen scale to weigh out your ingredients for most accurate results.
-
the cup measurements stated for this recipe assume that things like flour will be scooped, as this is what most people tend to do, so they might differ to typical cup measurements.
-
use cold heavy cream when making the cream cheese frosting, as this will be easier to whip.
-
when making your fruit pizza on a sugar cookie crust, i actually recommend letting the cookie crust cool completely, and then making the cream cheese frosting instead of making it ahead of time. this way, you can add the freshly whipped frosting straight onto your cookie base.
-
if you do decide to make the cream cheese frosting ahead of time, place it in the fridge while your sugar cookie base cools, so that the frosting remains firm and doesn’t become too soft.
-
pat any fresh fruit that you add dry before adding it to your sugar cookie and fruit pizza – this will remove any excess moisture and prevent the cookie base from becoming soggy.
-
store any leftover sugar cookie fruit pizza in the fridge.
-
for best results, assemble your sugar cookie fruit pizza just before serving so that everything is fresh.
frequently asked questions
-
can i use unsalted butter in this sugar cookie fruit pizza recipe?
– yes, you can use unsalted butter instead of salted butter. if you do use unsalted butter for your sugar cookie base instead of salted, just mix around 1/4 tsp of salt into the dry ingredients.
-
do i have to use vanilla extract in this sugar cookie fruit pizza recipe?
– the vanilla extract in this easy fruit pizza is optional. i like the subtle vanilla flavour it gives to the sugar cookie dough and the cream cheese frosting, but if you would prefer not to use it or don’t have it, that’s also completely fine.
-
why did my sugar cookie base turn into a cake instead of soft and chewy?
– the reason why your cookie base turned cakey is likely because of baking times. even if you follow the exact timings in the recipe, every oven will bake things differently so timings will vary depending on your oven. i highly recommend checking on your cookie base every once in a while, to make sure that it doesn’t overbake.
– another reason could be that there was too much flour in your sugar cookie dough. to make this fruit pizza made with sugar cookie dough as accurately as possible, i would recommend weighing out the flour using a kitchen scale.
-
can i make the sugar cookie base without heavy cream?
– the use of heavy cream in the sugar cookie crust helps add a nice chewiness and richness to the base. however, it is also completely fine to omit the heavy cream for this if you don’t have it on hand or would rather not use it. there will just be a slight difference in taste and texture.
-
do i have to chill the dough before baking the sugar cookie base?
– i would recommend chilling the sugar cookie dough before baking it. the sugar cookie dough is quite sticky when you first mix it, so it will probably be difficult to shape and handle. letting it chill in the fridge will help firm it up so that it’s easier to press into the pan. it will also help enhance the flavours.
-
can i make this sugar cookie fruit pizza ahead of time?
– if you want to make this sugar cookie fruit pizza ahead of time, i would recommend baking the sugar cookie fruit pizza base, and making the whipped cream cheese frosting ahead of time, and storing them separately. when the time comes to serve, just top your cookie base with the frosting, and add fresh fruit. this will keep everything fresh and prevent the cookie base from becoming soggy.
-
can i make this sugar cookie fruit pizza with store-bought cookie dough?
– if you want to keep this sugar cookie fruit pizza easy and quick, you can definitely make your fruit pizza with premade sugar cookie dough.
-
what fruits work best on this sugar cookie fruit pizza?
– you can really use any fruits that you like on your sugar cookie fruit pizza. i would just recommend avoiding anything that’s overly juicy or watery, like watermelon. i topped my sugar cookie fruit pizza with strawberries, blueberries, raspberries, kiwi and nectarine.
-
can i make this sugar cookie fruit pizza without cream cheese?
– this sugar cookie fruit pizza is topped with a whipped cream cheese frosting. the result is a thick, rich but still light and airy frosting that works so well with the sugar cookie and fresh fruit. if you really don’t want to make this sugar cookie fruit pizza with cream cheese, you can also just opt for a whipped cream topping or any other kind of frosting that you like.
-
how to store this sugar cookie fruit pizza?
– once your sugar cookie fruit pizza has been topped with the cream cheese frosting, be sure to store it in the fridge rather than leaving it out. once frosted, it’s best consumed within 1-2 days.
